1 or 2 square tofu<br />
2 tablespoons of ground pork or chicken<br />
2 tablespoons of chopped fresh coriander<br />
A few slices of ginger<br />
2 tablespoons of corn starch<br />
2 cups of water<br />
Salt (to taste)<br />

4 tablespoons of miso paste<br />
1 tablespoon of rice wine<br />
1 tablespoon of sugar<br />

Methods</h2>
1) Cut the tofu into squares.<br />
2) Mix the ground pork or chicken with seasonings in a bowl.<br />
3) Clean the mackerel fish with water.<br />
4) Apply corn starch all over the fish. (Corn starch will prevent the fish from sticking onto the pan during frying.)<br />
5) Heat 2 tablespoon of cooking oil in a frying pan and fry the fish until lightly brown on both sides.<br />
6) Add the slices of ginger and fry it for about 10 seconds.<br />
7) Add 2 cups of water to the fish and wait for the soup to boil.<br />
8) Add the seasoned ground pork or chicken into the soup and bring it to boil.<br />
9) When the soup is boiling, add tofu.<br />
10)Simmer on low heat for 10 to 15 minutes.<br />
11) Taste the soup. Add salt if necessary.<br />
12)Scoop the soup into a bowl and garnish with chopped coriander.<br />
