Lotus Root Soup Recipe - The Easiest Home Cooked Recipe

It is so easy to make and so tasty to sip that you cannot stop sipping it !


Lotus root soup is one of my family’s favourites.  We can have it a few times a week and still savour it. Just throw all the ingredients into the pot and boil for an hour.  It is that quick and easy ! Lotus root is well known for its health benefits of reducing heat in one's body and relieves constipation.

Ingredients

 about 600g (1 ½ Ib) of lotus root
about 400g of pork ribs or chicken ribs
3 tablespoon of raw peanuts (with skin)
10 red dates
Water

Seasonings

1 teaspoon of sea salt
1 tablespoon of soya sauce (optional)
Black pepper powder

Methods


1.    Remove the outer skin of the lotus root.
2.    Slice the lotus root as thin as possible.
3.    Boil half pot of water
4.    When the water is boiling, add in the chicken bone.
5.    Wait till the water is boiling, then add in the sliced lotus root, red dates and the raw peanuts.
6.    The water should be enough to just cover all the ingredients.  Add more water if necessary.
7.     Full boil for 5 minutes and turn to low heat.
8.    Simmer for 1 to 1.5 hour.
9.    Add salt, soya sauce (optional) and black pepper before serving.

Health Benefit of Lotus Roots   

 

Lotus root is known for its medicinal values. Some of its health benefits are :
1)    Stop diarrhoea.
2)    Reduces the heat in the body. Patients with high fever can drink lotus root juice cold.
3)     Improves one’s appetite.
4)    Rich in iron, vitamins B and C.
5)    Rich fibre content of lotus root stimulates peristalsis and relieves constipation.
6)     Drinking 2 to 3 glasses of lotus root juice a day may stop blood vomiting caused by bleeding of the oesophagus and stomach, discharging blood in the faeces due to bleeding of the rectum, intestines or stomach, nose bleeding or gum bleeding.

Chinese Wolfberry and Sea Bass Soup Recipe - Microwave Method or Boiling Method, You Decide !

You’ll lick till the last bone of the fish !

Not only is this Chinese wolfberry Sea Bass recipe tasty, it is oil free and nutritious !   Wolfberry or the Chinese called it “Goji”, have been used by Chinese herbalist and healer for their nutritional benefits for centuries. This magical berry contains a variety of nutrients including zeaxanthin, polysaccharides, selenium, beta-carotene, calcium and vitamins. The berries are a better source of Vitamin C than oranges. Scientists have found this berry to be one of the most nutritionally dense fruits on earth.


Ingredients


About 300g (10 ½ oz) of sea bass
50g ( 1 ¾ oz) Chinese Wolfberry
sea bass
1 scallion or spring onion
5 slices of about (5cm x  1cm size) ginger
5 cups chicken or pork broth

Seasonings


½ teaspoon of salt (to taste)
5 tablespoon of rice wine

Microwave Methods


1)      Wash the fish and cut horizontal lines on both sides of the fish body.
2)      Smear the fish with 1 tablespoon of rice wine and salt.
3)      Insert scallion or spring onions and slices of ginger in the fish belly captivity.
4)      Place the fish in the soup pot.
5)      Add wolfberry and the hot broth.
6)      Cover with cling wrap and the pot lid.
7)      Microwave on high for 10 minutes.
8)      Then add salt and the remaining rice wine.

Boiling Methods


1)      Wash the fish and cut horizontal lines on both sides of the fish body.
2)      Smear the fish with 1 tablespoon of rice wine and salt.
3)      Insert scallion or spring onions and slices of ginger in the fish belly captivity.
4)      Place the fish in the soup pot.
5)      Add wolfberry and the hot broth.
6)      Boil the soup.
7)      When the soup is boiling, turn to low heat and simmers for 15 minutes or until the fish is cooked.  (When the fish is cooked, you can easily poke the fish flesh with fork.)
8)      Then add salt and the remaining rice wine.

Turnip Soup Recipe - A Savoury and Healthy Choice

Turnips are excellent cruciferous vegetable for making soups; its mild flavour comes with plenty  of nutritional benefits. It is believed to help in fighting against cancer, prevent cancer and heart disease. The high level antioxidant content of turnip also enhances healing in the body. 

Some of the Turnip Health Benefits are :
  • Relieves sore throats and bronchitis
  • Helps with iron absorption
  • Reduces mucus
  • Improves asthma
  • Reduces arthritis pain
Turnips are an excellent source of vitamin C, B6, E, riboflavin, folic acid, fibre, manganese, pantothenic acid, and copper.  They are also a good source of minerals such as thiamine, potassium, niacin, and magnesium.
Here is the homemade version of an easy and tasty turnip soup recipe :

Ingredients


375g (13 oz) of chicken ribs or pork ribs
1 turnip
450g ( 1 Ib) of ham
2 scallions or green onions
1 small slice of ginger

Seasonings

1 teaspoon salt
½ teaspoon black pepper powder
½ tablespoon rice wine
½ tablespoon light soy sauce

Methods


1)      Wash the pork or chicken, and cut it into about 2 inches pieces. 
2)      Boil half port of water.
3)      Add the chicken and boil the chicken for 15 minutes. Turn off the heat.
4)      Peel and wash turnip. Cut the turnip into thin slices.
5)      Wash ham. Boil Water and scald the ham briefly in the boiling water.
6)      When cool, cut meat into large thin slices, the thinner the better.
7)      Wash scallions or green onions. Cut out and discard the scallion bulb. Cut the stalk into thin slices.
8)      Peel the ginger and cut it into pieces.
9)      Heat 1 tablespoon of cooking oil in a wok and stir fry the scallion and ginger until fragrant.
10)   Add turnip slices and stir fry turnip until half-cooked.
11)   Add broth and bring to boil.
12)   Add ham and seasonings.
13)    Cover and simmer the soup until it whitens.

Variations

Some people like to add the following to the soup for the distinct taste :
1)      Dried squid
2)      Raw peanuts

How to Make Papaya Fish Soup ? A Step By Step Guide

Healthy Papaya and Fish Soup Recipe – A Delicious and Nutritious Soup for Everyone



Among the Chinese community, this delicious and nutritious papaya and fish Soup are believed to help a breastfeeding mother to increase her breast milk supply during the confinement period.  Fish is a good source of protein while papaya is rich in minerals, Vitamin A, C and E.  With these rich nutrition contents, the soup provides healthy meal for everyone, even more so for a breastfeeding mother.
The most basic version of this soup includes a few very simple ingredients: fish, green or almost ripe papaya, ginger, water and salt. Add all these ingredients into a pot and boil it for about 20 minutes.  For richer or stronger taste, boil the soup until the water turns to milky colour.  It is so tasty and well-liked by many.

Ingredients

350g  (11 oz) Carp Fish or Red Snapper
About 500g (1 Ib) of one slightly unripe papaya
6 cups of broth
1 tablespoon of ginger shreds
1 tablespoon of chopped scallion / green onion (optional)

Seasonings

½ teaspoon of salt (to taste)
½ teaspoon of Rice wine (optional)

Methods

1.      Wash the fish, cut the fish out from the bone (remove the bone), and cut the fish fillet into slices.
2.     Cut the papaya into half and remove the seeds. Slice it into similar size as the fish pieces.
3.     Pour the broth and ginger shreds into a pot. Bring to boil for about 3 minutes.
4.     Add the papaya and fish slices. Bring to boil again for another 5 minutes.
5.     (If you like stronger and milky taste, boil the soup until it turns milky colour, which may take 1 to 2 hours)
6.     Add seasonings and garnish with green onion. 

Variations

You can also add
1.     red dates
2.     white fungus
3.     dried black mushroom
4.     sesame oil
5.     white pepper powder
for sweeter and more distinct taste.
