Miso Soup Recipe - With Fish and Tofu

This simple and high protein fish and tofu soup recipe offers restaurant-quality soup in just a few steps. The delicious soup goes well with steamed rice. It certainly can provide you with a bowl of warm comfort on a chilly day. Do enjoy!

Ingredients

600g (1 ¼ Ib) of mackerel fish
1 or 2 square tofu
2 tablespoons of ground pork or chicken
2 tablespoons of chopped fresh coriander
A few slices of ginger
2 tablespoons of corn starch
2 cups of water
Salt (to taste)

Seasonings

4 tablespoons of miso paste
1 tablespoon of rice wine
1 tablespoon of sugar

Methods

1) Cut the tofu into squares.
2) Mix the ground pork or chicken with seasonings in a bowl.
3) Clean the mackerel fish with water.
4) Apply corn starch all over the fish. (Corn starch will prevent the fish from sticking onto the pan during frying.)
5) Heat 2 tablespoon of cooking oil in a frying pan and fry the fish until lightly brown on both sides.
6) Add the slices of ginger and fry it for about 10 seconds.
7) Add 2 cups of water to the fish and wait for the soup to boil.
8) Add the seasoned ground pork or chicken into the soup and bring it to boil.
9) When the soup is boiling, add tofu.
10)Simmer on low heat for 10 to 15 minutes.
11) Taste the soup. Add salt if necessary.
12)Scoop the soup into a bowl and garnish with chopped coriander.
